Grape Varieties: Corvina Veronese and Corvinone Veronese 65%, Rondinella 35. All selected by hand at the end of September.
Selected vineyards located between 200 and 350 meters above sea level, on the hills of the municipality of Marano, in the heart of the Valpolicella Classica production area. The grapes dry for about 100 days, with a natural drop of 35-40% in weight. In the drying room the grapes are constantly checked for proper quality. Soft pressing of the previously dried grapes, the process continues with fermentation at controlled temperature and maceration for 30 days. Most of the grapes are aged in 50 hl Slavonian oak barrels for 24 months. What remains is then matured for 18 months in medium toasted Allier oak barriques. Final aging of 6 months in bottle
Tasting: Wine with a deep garnet red color. Spicy and vanilla scent, full and velvety taste. Excellent wine to be paired with game meat, aged cheeses and roasts. To be served at 17-18 ⁰C.
