Destemming with soft crushing of the grapes, fermentation and maceration with the skins for about 10 days. During maceration are performed delestage replacements to promote the extraction of color and virials fragrances. After 2 transfers to eliminate the solid parts, malolactic fermentation is carried out and then the wine is decanted into wooden barrels of different carat according to its characteristics. The refinement lasts 12/16 months, and weekly we proceed to the filling and to the control through tastings and analysis of the evolution of the right maturation of the wine.
Tasting: In red garnet colour with orange reflections, it has a scent of violet, ethereal, intense. The flavour is dry with a soft tannin, fine, elegant, austere but velvety, harmonious.
