Composed of 100% of the Sémillon grape variety, the vineyard is located on a limestone plateau, facing North East. The vines are supported throughout the vegetation cycle (suckering, leaf stripping, thinning) to control the sometimes excessive yield and allow the ideal wait before harvesting.
The harvest is done by hand; the grapes stored in crates are stored in the cold for 24 hours before gentle pressing. The musts are put in barrels and amphorae from fermentation until bottling.
Aged on fine lees, the wine presents a character of white fruits, a fresh, creamy and delicate palate, ideal to accompany cooked fish.
